Gluten & Dairy free based on this recipe for Golden Sweet Cornbread.


**1 cup rice flour
1 cup yellow cornmeal
1/3 cup white sugar
1 teaspoon salt
3 1/2 teaspoons baking powder
1 egg
1 cup almond or flax milk
1/3 cup vegetable oil


  1.  Preheat oven to 400 degrees F (200 degrees C). Spray or lightly grease a 9 inch round cake pan.  I use a dutch oven with either olive oil or a fake butter olive oil/canola oil mix.  Straight canola oil has negative taste to me.

  3.  Bake at 400 degrees F for 20-25 minutes.  In my oven it takes 26 min in the dutch oven if the dutch oven is preheated on the stove to heat the oil.
