- 2 cups brown rice flour
- 1/2 tbl baking soda
- 1 tsp sea salt
- 1 tsp cinnamon
- 1/4 cup sugar (or 20 drops vanilla crème stevia)
- 3 eggs
- 1 3/4 cup flax milk
- 3/4 cup pumpkin puree (or banana puree)
- Blend pumpkin in a blender until its nice and smooth.
- Combine all other ingredients in a large bowl.
- Stir in pumpkin and mix well.
- Cook on medium using about 1/4 cup of mix for each pancake.
